Matcha Crinkle Cookies

There's something so satisfying about a crinkle cookie — the soft, tender center, the delicate crackled top, the snowy dusting of powdered sugar. Add a little matcha to the mix and you've got a cookie that's as beautiful as it is delicious. These are perfect for spring brunches, baby showers, or even a St. Patrick's Day treat.
Ingredients
Dough:
- ½ cup unsalted butter, softened (114g)
- 1 cup sugar (200g)
- 1 tsp baking powder
- ⅛ tsp baking soda
- ½ tsp salt
- 2 eggs
- 2 cups flour (260g)
- 2 tbsp matcha powder
For Rolling:
- ¼ cup granulated sugar (50g)
- ½ cup powdered sugar (50g)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter with the sugar, baking powder, baking soda, and salt until light and fluffy.
- Mix in the eggs until fully combined.
- Sift the matcha into the flour, then fold the dry ingredients into the wet mixture until a dough forms.
- Scoop dough into 1½ tablespoon balls.
- Roll each ball in granulated sugar, then in powdered sugar.
- Bake for 11 minutes. The cookies will look underdone — that's the goal. They'll set as they cool.
